Update #1: Lunch Salad
Most days during lunch hours, I’m feeling hungry, anxious, and paranoid about something at work, and I eat something from nearby the building. Anyways I’m trying to eat a healthier lunch that slows me down the least while keeping me full
DAY 1: no avocado for lunch. It’s too fatty and my whole body shuts down. Excuse the grossness of this picture
Update #2: No avocados or cabbage or stevia
Still trying to figure out what ingredients make very bloated and foggy. Stevia is technically on the low fodmap, but idk why it's acting weird.
No avocado or cabbage made my brain a lot more clearer for whatever reason
Update #3: Chopped salad
The process of chopping cucumbers was actually very calming. More zen than taking salad out of a bag
Update #4: Big vegetables + beef and eggs salad
Trying a bigger volume salad bc I’m so hungry lately for no reason, but also don’t want to add calories.
The salad is 0.5 bag sof lettuce mix, 1 whole cucumber, 2 small tomatoes, 2 scrambled eggs, 4-5oz of ground beef. Dressing is a tbsp of olive oil and salt.
Update #5: Chopped chicken salad
Very delicious.
Eveyrthing’s chopped so it’s easy to eat.
0.5 cucumbers, 0.5 apple, 0.5 handful of arugula, pinch of granola, and pollo chicken (https://www.instacart.com/products/3280590)
Dressing: yigurt, olive oil, sherry wine, salt and pepper.
Update #6: Back home and eating salad!

Update #7: That’s a wrap! Maxed out my salad abilities
100% completeI’m wrapping up the salad goal so I move on to eating more complex carbs and fiber. Hard to do that with salads, but overall I’m feeling quite good about my salad making abilities now
